Ok people. I think so of myself that I have a pretty good tomatoes (pasta) sauce do. So here's my recipe. Since the preparation takes a while to claim I recommend preparing a größereb crowd. then freeze in portions, and there is always delicious food at what home. In any case better than Fertigfrass.
Ingredients (I guess times for 4 people):
- 2 stalks celery
- a medium-sized onion
- 3 Knaoblauchzehen
- 1kg (usually means the 2 packages) chopped tomatoes or whole tomatoes from can or tetra pack. Really take the lump or the whole and not the mashed tomatoes to get the sauce a nice texture and is so rustic!
- olive oil basil (frisch!)
- salt pepper balsamic

Sofritto. This is a mixture of sautéed vegetables, that is the basis of many Italian dishes. Depending on who you ask need different things "should" turn. I for one am onion, garlic and celery. But it would also take him as peppers, carrots, chilli peppers cut, etc. This

The whole thing lasts about 15 to 20 minutes. Then, basil and tomatoes and stir well. This mixture now needs to at least (!) One hour less Cooked slowly. Every now and forget not to stir. The right time is when all the sauce has a smooth texture and no longer be separated liquid and solid components from one another. Hard to describe - there is definitely a consistency with the time change that the mixture can be homogeneous ...

When the sauce has ceased to cook, makes a dash of balsamic vinegar still there (such as one to two tablespoons). This contradicts the sweetness of the tomatoes and the sauce is an incomparable flavor.

This is a basic tomato sauce, which in itself is pretty tasty, but can of course also serve as a basis for other sauces, ie with chillies, grilled vegetables, carrots (even the Sofritto with pure), minced, cream, tuna capers, olives, etc. ..
